Our first real taste of summer? A lobster roll at Clark's, cold drink in hand, sporting our very own KK Custom Icon Button Down. There's something about the classic New England bite – creamy lobster nestled into a lightly toasted bun – that captures that summer feeling we all know and love.

Inspired by our most recent visit to Clark's, this recipe leans into the Maine-style tradition: chilled lobster dressed in just enough mayo, a squeeze of lemon, and a handful of fresh herbs.

And while this is not a no-cook recipe, it still is about as effortless as summer cooking gets. The buttery, golden crunch against the cool, creamy lobster? Pure magic!

The Perfect Summer Lobster Roll

(Makes 8 rolls, serves 4-8 friends)

Ingredients:

-1 ½ pounds cooked, shelled lobster meat, chopped into ½ inch pieces

-2 tablespoons of your favorite creamy mayonnaise

-½ teaspoon finely chopped fresh chives (entirely optional but highly recommended!)

-½ teaspoon finely chopped fresh tarragon or chervil (for that sophisticated herbal note, again, optional!)

-1 teaspoon fresh lemon juice

-Coarse or sea salt

-Freshly ground pepper

-8 top-split hot-dog buns (the unsung hero of the lobster roll!)

-1 ½ tablespoons unsalted butter, melted, for those perfectly golden rolls

Crafting Your Rolls:

  1. The Lobster: In a bowl, gently combine your lobster meat with the mayonnaise. Next, delicately fold in the fresh chives and tarragon and add a squeeze of fresh lemon juice. Season with a sprinkle of salt and a generous grind of fresh pepper. Give it a gentle stir, cover and pop it in the fridge while you prep your buns. It can chill for up to 2 hours!

  2. Toasting the Bread: Grab your favorite heavy skillet or griddle and place it over medium heat until warm. Now, take your top-split buns and lightly brush the outside of each with the melted butter. Transfer them to the hot skillet. Cook, turning once, until golden brown – about 1 ½​ minutes per side. These buttery buns are the foundation of your lobster roll dreams!

  3. The Grand Assembly: This is where the magic happens! Spoon about ½ cup of your lobster mixture into each bun. Top with fresh herbs and serve immediately.
